One of my favorite perennial veggies is the artichoke. I have three in my garden. Two of the plants are still pretty small. But the third is a fantastic Violetta Artichoke. It has purple flowers that turn green when cooked, but strangely turn back to purple when cooled. The cooking water turns the usual olive-green, but then turns deep purple when cooled to room temperature. Strange. But still tastes great!
This plant is a monster! It is almost as big as the little Red Bud tree planted next to it.
